I had a tray of Lebanese cucumbers that
were sitting in the fridge untouched, so I
put them to good use in some
mustard pickles.
The recipe I had makes a large quantity so
I made up a smaller recipe.
This only used about 650g of cucumbers and a cup
of frozen corn kernels.
to that I added
1 onion
2tsp mustard powder
3tsp curry powder
1/4tsp turmeric
1 tsp salt
2 cups vinegar( I used malt)
1 cup brown sugar
bring all of this to the boil and simmer
for 15 mins to vegetables are cooked.
then
2 Tbsp plain flour add enough vinegar to make a smooth paste
and add to the simmering vegetables and stir
till thickened about 5 mins.
It made these 2 bottles and about another 1/2 cup which was
eaten yesterday with cold meat for lunch.
We have sunshine today and
my washing is flapping in the breeze.
